You asked for it, you got it. Cookies so cinchy to make your 6-year-old or your husband will have no trouble whipping up a batch, although you may want to just do it yourself and take all the credit, as if it took more than a few minutes and half a brain. Here, then, is a super-easy, great-looking (aren’t they? Very cookie-like?) cookie with absolutely nothing but good, nutritious stuff in it. Not low calorie, but you could eat 4 or 5 of these instead of dinner with absolutely no guilt. We did four versions, and you could probably come up with your own special way to do them, too.
Preheat Oven to 350 degrees, Fahrenheit.
- 8 oz Almond Butter
- 1/2 cup Coconut Flour
- 1 cup Just Like Sugar “baking”
- 1 tsp. Vanilla Extract
- 1 tsp. Baking Soda
- 1 Large Egg
- Pinch Salt
Mix almond butter, egg, “Just Like Sugar,” vanilla, baking soda, coconut flour and pinch of salt in a bowl . Place parchment paper on a cookie pan. Take about an inch of cookie dough, roll it into a ball and place it the sheet.
Put sugar-free chocolate pieces on top, or break them up and make chocolate chips. Squish with a fork or leave in a ball. Bake them for 10-12 minutes, until firm but not browned.
Badaboom. Next time I’m gonna try them with dried apricot pieces, or maybe a lovely whole almond right on top.
